Broccoli, white cabbage, Brussels sprouts and other brassica vegetables from the cruciferous family (Cruciferae) are among the foods whose healthy character has been proven in numerous studies.These vegetables contain a special ingredient in particular: indole-3-carbinol (glucobrassicin), which is only converted into 3,3-diindolylmethane (DIM) in the human body during digestion.Or to put it another way: DIM only occurs in nature as a metabolic product in the human (and animal) organism, but not as a component of plants.Only the precursors, indole-3-carbinol, are found there.

Indole-3-carbinol is a sulfur-containing glucosinolate and is one of the secondary plant substances.Unfortunately, like all glucosinolates, indole-3-carbinol is very sensitive to heat.When the vegetables are cooked, the important biological substance is destroyed, so that the absorption of indole-3-carbinol from food is only possible to an insufficient extent.100 g of raw, unheated broccoli still contains an average of 51 mg glucosinolates.After heating, only around 21 mg of glucosinolates remain.Eating too few vegetables and infrequent raw consumption results in an average daily intake of just 43 mg of glucosinolates.Due to this low intake of the important glucosinolates with normal food, a daily supplement to the diet with plant extracts rich in glucosinolates is generally recommended.
